Like spaghetti it's 10 inches (26 cm.) in length but with a flat, narrow shape. It's broader shape makes it a better fit then spaghetti for sauces that are heavier, meatier or generally thicker in nature. In comparison to other famous cuts, linguine is narrower then fettuccine which in turn is narrower then tagliatelle. The wider the sauce, the more of a bronze-extruded surface it provides to which rich sauces can adhere. The di Martino family has used spring water from local aquifers and 100% Italian durum wheat which, combined with bronze-extrusion and slow drying, produces this tasty I.G.P. pasta!
