This mystery Yarra Valley Sauvignon Blanc, from one of the region's most renowned producers, is an easy-drinking delight. Fruit for the wine is handpicked and whole bunch pressed without the addition of enzymes or acid. The wine is settled for 24 hours at two degrees, then racked as cloudy juice to old white cask. It is then kept on lees until September, then bottled with minimal filtration. The product is a flavoursome, crisp drop, with notes of green apple and white peach, with pleasant acidity and a gorgeous zesty quality. This is seriously good drinking.
