GRAPES ARE PICKED UP AT THE END OF SEPTEMBER AND THE FERMENTATION TAKES PLACE AT A CONTROLLED TEMPERATURE OF 16-18 DEGREES: FIRST, ONE MAKES THE MUST REMAIN ON THE PEEL DURING TWO DAYS AT LEAST AND THEN PROTRACTS FERMENTATION VERY SLOWLY.
