5% whole bunch estate Pinot Noir, fermented with wild yeasts and left on skins post ferment until the tannins aligned. Matured for 12 months in a mix of barriques, hogsheads and puncheons with 10% new oak, and a further 3 months in stainless steel before bottling.
The aromas are typical for a Sailor Seeks Horse Pinot, a subtle savoury note sings in tandem with Australian bushland and free-flowing creeks. The fruit is layered and complex, note of red and blue dripping with richness.
