VINE: “ARNEIS FROM LANGHE” IS OBTAINED THROUGH “ARNEIS” VINE CLONIC SELECTION WHICH IS CARRIED OUT IN NEIVE BY TURIN UNIVERSITY. IT IS CULTIVATED ON WHITE, CLAYEY AND VERY WELL EXPOSED SOIL. GRAPES ARE PICKED UP AT THE END OF SEPTEMBER AND THE FERMENTATION TAKES PLACE AT A CONTROLLED TEMPERATURE OF 16-18 DEGREES: FIRST, ONE MAKES THE MUST REMAIN ON THE PEEL DURING TWO DAYS AT LEAST AND THEN PROTRACTS FERMENTATION VERY SLOWLY.
